Shelter in place, self-quarantine, and social distancing may have us all feeling a little too cooped up, missing our favorite restaurants and treats to snack on. There are lots of super simple recipes we can make at home though with ingredients we already have on hand! See what you think of these three mouthwatering ideas…

Flourless Peanut Butter Cookies

These are way better than store bought and ready in just a few minutes.

  • ½ Cup Peanut Butter
  • ¼ Cup Maple Syrup
  • 2 TBSP Melted Coconut Oil
  • 1 Tsp Vanilla Extract
  • 1 Cup Oat Flour
  • Salt to taste

Combine all cookie ingredients in a bowl. Scoop dough onto baking sheet and press criss-cross pattern onto cookies with the back of a fork. Bake at 325° for 5-8 minutes. Note: If you don’t have oat flour on hand or have never made it before, simply chop quick oats in a food processor or blender to create a powder consistency.

Classic Popcorn With A Flavor Twist

Microwave popcorn may be the go-to for many, but if you hate plastic or shun microwave cooking, you’ll love this fun, old-fashioned, stovetop popcorn recipe. It’s perfect for movie night!

  • ⅓ Cup Popcorn Kernels
  • 1-2 TBSP Oil (coconut, olive, avocado, etc.—your choice!)
  • Salt to taste

Heat oil in a deep pot with a lid. Add popcorn kernels. When you hear the first one pop, use a pot holder to steadily hold the lid on top and slide the pot back and forth to keep all the kernels moving as they continue to heat and pop. When popping sound slows, remove from heat and carefully pour popped corn into bowls. Top with salt and any other seasonings you may desire—melted butter, cinnamon, sugar, cayenne pepper, rosemary, nutritional yeast…

Cheesy Bean Dip

Whether you have pinto, black, kidney, or a different variety of canned beans, this quick dip recipe is warm and satisfying.

  • 1 Can Drained Beans
  • 2-3 Tsp Spices of choice (garlic powder, onion powder, chili powder, cumin, cayenne, etc.)
  • Shredded Cheese of choice

Smash beans in an oven safe baking dish. Stir in spices to season to your taste preferences. Sprinkle shredded cheese on. Bake at 350° for 10-15 minutes. Enjoy with chips, crackers, or by the spoonful.
